A couple of years ago, we took a family day trip to Grand Bend with my son and his then-fiancée (now married!). I hadn’t been since I was a teen. We had a blast. The newly engaged spent most of the day out at the beach while we walked around the shops, followed by a run through the water (sadly, it’s true, I still cannot swim). The sun was hot, so we tucked away into one of the beachside pubs waiting for the newlyweds to join us.
When the kids had finally had enough beach time, we went out for an early dinner before heading home. Some of my fondest current-day moments are times spent talking around the dinner table as a family – me, as someone who’s finally starting to figure things out, and my son, as a young man, carving out a life for himself. And so the family grows.
I thought about this particular trip this evening while searching for a new salad recipe online. This is similar to the salad I ordered when we all went out to dinner at the Growling Gator in Grand Bend:

Maybe it was the company or the margaritas, but my meal was superb (and I don’t really care for beets that much).
Here’s the recipe I found. I can’t say it’s exact, but it looks close enough. I may do a trial run and share the results (as they’re always a surprise and look nothing like the photo).
PS – the beets were diced into small pieces – and the roasted, candied walnuts and apples were amazing. Give it a try!
